Zucchini and Lentil Pasta

I absolutely LOVE pasta, but sometimes I'm just in the mood to switch things up. I recently obtained a spiralizer, which is this handy kitchen gadget that basically creates noodles out of your vegetables!

This is a great way to incorporate more vegetables into your diet without you even realizing. Also, it's a great way to have a lighter meal without feeling weighed down by the pasta. Yet, even though it's not as heavy, this recipe is still packed with nutrients and will keep you feeling full but energized.

This recipe is super customizable so feel free to add or omit to your liking! I hope this gives you some inspiration on how to switch up your average pasta dish! ♡, Kellie

Ingredients:

Lentils

Zucchini(s)

Mushrooms (sliced)

Bell pepper (sliced or chopped)

Pasta sauce (of your choice)

Red pepper flakes (optional)

Other spices (optional)

Directions:

1) Cook the lentils according to the package. (I made a big batch and portioned off what I would use for this recipe and kept the rest for other meals!)

2) Use your spiralizer to create noodles from your zucchini.

3) In a saucepan, add your zucchini noodles, sliced mushrooms, bell peppers, and any other veggies you want along with a little water so that nothing sticks to the pan. You can put a lid over it so it steams the veggies.

4) Once your veggies are cooked to your liking, add in a serving of lentils. Add your spices/seasonings if you choose to do so. Pour the pasta sauce over top and stir until it's evenly distributed and heated through.
